The winemaking of the Cabernet Sauvignon seeks elegance and finesse, rather than overpowering flavour and American-oak. In the style of French Bordeaux we seek complexity, sophistication, and unique flavours including cherry, tobacco, herbs, coffee, earth, mint, and roasted tomato. No oak is added, but the wine is gently oxygenated at certain times of its maturation. Not cloaked in oak, the secondary aromas and terroir are as important as the fruit to the overall enjoyment.
