Chateau Pierre-Bise Savennières Roches aux Moines 2009
The fermentation here is 100% in wood. Malolactic fermentation 90-95%. This shows very little on the nose, clearly a more reserved style, although there is still a very precise and direct style of fruit here. On the palate it is very much more reined in than the first two, showing a less angular character, more polished, with all of its corners shaved off. But there is still a very dense structure to it. Overall this has a beautiful style, and is just full of potential for the cellar. WINEDOCTOR

Denis Pommier, Petit Chablis 2009
Denis and Isabelle Pommier have built up quite a following amongst sommeliers 'in the know' in recent years and certainly the Petit Chablis is a brilliant wine to serve by the glass. It is a model of brisk freshness - made entirely in stainless steel, while the Premier Crus benefit from a small amount of barrel-fermentation and élevage.

Domaine de Baumard, 'Clos de St Yves' 2007
A simply stunning Chenin Blanc offering from a small, quality orientated producer in the Loire Valley. A beautiful, perfumed, elegant nose, which has a touch of honey and acacia. Warm and rounded palate, with straw and honey flavour, and a toffee thread too.

Puffeney, "Cuvee Sacha" 2005
Made from from a blend of savagnin [flor-yeast aged] and chardonnay [aged in the burgundian way]. The result is a deliciately nutty style but with freshness and focus. A perfect aperitif. The name is derived from the cepage mix: SAvagnin & CHArdonnay! What a funky little wine this is and one of our favorites up here at Vaucluse. This wine is made in an oxidative style which adds an extra dimension to the wine. For the true enthusiast!
