The wine remains in the fermentation barrels until the end of February to be then ripassato (passed over) the Amarone skins fo 7/10 days

Bollini Pinot Grigio 2015
The wines come from choice hillside locations in Trentino where a combination of high altitudes, a multitude of mesoclimates and night/day temperature extremes speak concentration and breeding. Pinot Grigio exhibits traits seldom achieved at this level, with pear fruit, mineral notes and a creamy texture. The grapes are vinified and aged in stainless steel but, to engender further complexity and depth, the wine undergoes bâtonnage on the lees. It is the perfect aperitif white wine but matches well with all types of fish and shellfish.

This dry, red wine made from the Montepulciano grape in the Abruzzo region of east-central Italy is noted for its deep reddish-purple hues and subtle nose with clear aromas of coffee and dark chocolate. The wine smells like Tiramisu in a glass. They are wines of medium body with silky tannins and a pleasant mouth feel and a subtle finish, very fresh, and fruity.

Clerico’s Ciabot Mentin Ginestra was one of the first Barolos that really captivated my attention and for me it remains this producer’s most representative wine.
