Cullen, Vineyard Sauvignon Blanc Semillon 2009
This is a first rate example of the unique style that has been developed by Cullen Wines from blending the two great white grape varieties of Bordeaux. The wine was made from 81% Sauvignon Blanc and 19% Semillon, which were picked at optimal physiological ripeness and Baumés ranging from 12° to 13°. Twenty seven percent of the wine was fermented in French barriques using indigenous yeasts and it was matured in that oak for four months.

Nicholson River Semillon Sauvignon Blanc 2008
This SSB is not a prissy little princess. Parially barrel fermented it falls in the power specrum, an Alpha SSB if you like. Don't let this deter, let your guard down- just prepare some Salmon, simply - pan fried with salt and lemon - a little under cooked, rest under foil for 15mins - crack a bottle of NRW SSB, put you feet up and rejoice wines like this still exist!

West Cape Howe, Semillon Sauvignon Blanc 2011
Multiple parcels of Semillon and Sauvignon Blanc were selected from Great Southern, Blackwood Valley and Pemberton vineyards. The fruit was crushed with minimal sulphur and chilled prior to pressing, Free run and pressings juice portions were kept separate, with the pressings fined to remove phenolic compounds. After cold settling for 48 hours, the juices were racked and filtered, before inoculation with a specific yeast strain for this style. The juice was fermented at a steady rate over an 18-day period, with temperature closely monitored. At the conclusion of fermentation, the wines were racked and a final blend determined. The palate has a refreshing acidity. Good tropical fruit characters offer great intensity. A well-balanced style with a long, clean and refreshing finish.
