The base is defined by rhubarb and wild strawberries with a decaying edge, damp forest, dead flowers—all in a positive, intriguing way. It has great energy and despite the grip, the texture is fine, reminiscent of wet clay. The nature of tannins could take you to Italy. Not a bad thing. There are crushed rocks here and cinnamon bark, too. There’s a green peach bite and firmness to the structure and a lot of the flor yeast influence in form of brine and green olive lift, along with notes of caramel dipped cashews. Got a bit emotional here, forgive me… Open to interpretation. I think, in this case and by this stage, if you know you love sous-voile Jura, there’s no need for thinking twice here. You get all the goods from this Savagnin aged for almost four years in old oak barrels. It has THE perfume. Pungent—yes, delicious—abso-f-lutely.
