The Wine

Sourced from 25 year old estate vineyards close to Pouilly Loche. Schist soils, average yields of 35 hcl/hct. Hand picked then fermented exclusively in 3500ltr wooden vats. Whats special about these vats is that the Battonage (lees stirring, a key element to adding texture in Chardonnay) is achieved using Christophe's state of the art automated battonage propellers at the bottom of the Foudre. They are exactly as they sound, a propeller that Christophe can be programmed specific to each vat/vintage. Cordier was the first to source these vats in Burgundy, which were generally used in Champagne. Post ferment the wine sees 15 months in these same 3500ltr wood vats. I always feel this wine is a true representation of Chardonnay specifically from the south of Burgundy.

About the Wine Maker

Christophe (Cordier) appears to have boundless energy and ambition. His Domaine is amongst the finest in Macon. ROBERT PARKER Roger Cordier started the Domaine in 1930 with just 5 hectares. When Christophe took over in 1987 he stopped selling to negotiants and focused on improving the vineyards, converting to organics & reducing yields. In 2015 he opened a new entirely gravity fed winery in Fuisse with the aim to take even more care during the vinification and aging process. The estate is now 32 hectares including some of the best vineyards in Pouilly Fuisse and surrounding Macon appellations, a mosaic of parcels as described by Christophe, understandably so when he confirms that there are over 120 differing plots. He has being farming organically since 2018 and hopes to acquire certification from the 2021 vintage, alongside adopting biodynamic principals for his entire Domaine. All fruit is hand picked, whole-bunch pressed with 90% of all movements in the wine production process done by gravity. Natural yeasts on all wines. All wines are fermented in large wooden vats or foudre. No fining, light filtration With Bourgogne wines skyrocketing in price Christophe's offers simply superb value, much to do with him owning great plots bordering Fuisse and not at the mercy of growers. He's also streamlined vinification via technology without effecting quality.
