"A subtle but perceptible application of wood sets off equally ripe aromas poached pear, apple, citrus confit and mineral reduction. Here too there is excellent density to the palate soaking medium-bodied flavours that also flash good muscle and power on the equally compact and built-to-age finish. About the Wine Maker 
François Servin along with his Australian associate Mark Cameron, directs the operations of this 30 Ha domaine. The Servin family has owned vines in Chablis since 1570, but their roots go even further. Since 1998, the estate has been managed by François, a fervent believer in the ageing capacity of Chablis. His understanding of his old vintages convinced him that malolactic fermentation and late bottling increases the ageing capacity of his wines. This is done in oak, but with great care taken to add volume and length, rather than flavour.
