The Wine
On the 2018 Vintage : "The 2018 Chablis La Forêt 1er Cru is fascinating to taste next to the Montmains, the larger appellation which it falls under. Finely cut and intensely saline, the Forêt bristles with tons of energy and cut. Crushed rocks, lemon peel, white flowers and white pepper give the Forêt its striking brilliance. I imagine the 2018 will need at least a few years in bottle. It is one of the most tightly wound wines in the cellar today." 92-94 Points, Vinous

About the Wine Maker 
François Servin along with his Australian associate Mark Cameron, directs the operations of this 30 Ha domaine. The Servin family has owned vines in Chablis since 1570, but their roots go even further. Since 1998, the estate has been managed by François, a fervent believer in the ageing capacity of Chablis. His understanding of his old vintages convinced him that malolactic fermentation and late bottling increases the ageing capacity of his wines. This is done in oak, but with great care taken to add volume and length, rather than flavour.
