Domaine Servin Chablis 1er Cru Montee de Tonnerre 2019
The Wine
93 Points Burghound : "A discreet but perceptible dose of wood can be found on the cool floral, pear confit, tidal pool and iodine-scented nose. The refined, intense and wonderfully sleek medium weight flavors flash a bracing salinity on the classy, balanced and wonderfully persistent finale. This chiseled effort is a relatively powerful MdT and like several wines in the range, possesses a genuinely lovely texture. Recommended. Sweet Spot Outstanding!"

About the Wine Maker
François Servin along with his Australian associate Mark Cameron, directs the operations of this 30 Ha domaine. The Servin family has owned vines in Chablis since 1570, but their roots go even further. Since 1998, the estate has been managed by François, a fervent believer in the ageing capacity of Chablis. His understanding of his old vintages convinced him that malolactic fermentation and late bottling increases the ageing capacity of his wines. This is done in oak, but with great care taken to add volume and length, rather than flavour.
