Domaine Servin Chablis 1er Cru Montee de Tonnerre 2020
The Wine
Here the expressive nose is at once much more floral but also more elegant with its airy aromas of cool citrus, quinine, tidal pool and oyster shell hints. There is a lovely sense of restraint to the palate etching middle weight flavours that are shaped by citrus-tinged acidity on the balanced, bone-dry and lingering finale. This classy effort is very MdT in style. Outstanding 91-93 points Alan Meadows

About the Wine Maker
François Servin along with his Australian associate Mark Cameron, directs the operations of this 30 Ha domaine. The Servin family has owned vines in Chablis since 1570, but their roots go even further. Since 1998, the estate has been managed by François, a fervent believer in the ageing capacity of Chablis. His understanding of his old vintages convinced him that malolactic fermentation and late bottling increases the ageing capacity of his wines. This is done in oak, but with great care taken to add volume and length, rather than flavour.
