The Wine
91/100 Burghound : There is a vague whiff of the exotic lurking in the background of the aromas of white peach, honeysuckle and quinine. The middle weight flavours aren't quite as concentrated though they are perceptibly finer with a fine bead of minerality adding a sense of lift to the borderline salty, clean and nicely long finish. Once again, more depth would help but the underlying material appears to be present for that to occur. Outstanding

About the Wine Maker 
François Servin along with his Australian associate Mark Cameron, directs the operations of this 30 Ha domaine. The Servin family has owned vines in Chablis since 1570, but their roots go even further. Since 1998, the estate has been managed by François, a fervent believer in the ageing capacity of Chablis. His understanding of his old vintages convinced him that malolactic fermentation and late bottling increases the ageing capacity of his wines. This is done in oak, but with great care taken to add volume and length, rather than flavour.
