Just 0.9 hectares. Far more white clay than the other plots between the 1er Cru hills of Vaillons and Le Foret. Located in between La Foret and Vaillons. Kimmeridgian with lots of white clay. North West facing - 40 years old vines. Wild rermented in steel then Elevage in barrel for 12 months of 6 to 30 year old barriques.

(89-91) Drinking window: 2022-2028.“The 2020 Chablis Boucheran, from vines located between Montmains and Vaillons, has a refined bouquet of lovely yellow flower, chamomile and light earthy scents. The palate is well balanced with a lilting opening and passion fruit and pineapple flavours. Refined and open towards the finish. Drink this early – you will not be disappointed.”

This tiny Domaine is only into its third vintage but you may recognise the Vocoret name – the name Vocoret has been around Chablis for quite a while - Edouard is the 7th generation winemaker from the family, who has decided, with his wife Eleni, to begin a solo project. So with the help of Edouard’s father who gifted them just 4.89 hectares to work, off they set on their journey. The approach the couple have taken is quite different from their families larger and more well-known estate, here the couple do everything by hand, the vineyards farmed meticulously and along organic principles, the ferments are conducted with wild yeasts and only old wood is used. These are just some of the principles they learned while working alongside Chablis treasured icon Vincent Dauvissat, perhaps this is in part why these wines are so good, they have learned from the master! Even though its’s only their 3rd Vintage, our allocation has reduced considerably from their first release – obviously there are those in the know getting on board – principally leading restaurants around the world. It’s an absolutely fantastic wine, from a young couple with plenty of history to draw on – time for you to get on board too!
