Hand-picked between March 14th and 25th, the fruit was almost entirely destemmed with just a few whole bunches, keeping plenty of whole berries, and fermented with wild yeast. Skins stayed in contact for 21 to 28 days before maturing for 12 to 18 months in French oak barrels, less than 10% of which were new. The wine’s aroma is pretty and lifted, with hints of rain-washed petals, hedgerow fruit, and a trace of spice.
