Maturation and malolactic fermentation took place over 16 months in 4,500L seasoned French oak foudres and 300L French oak hogsheads, with 10% new oak adding a subtle lift. No fining was used, keeping the wine’s natural vibrancy intact. The nose bursts with red berries, blueberries, and liquorice, accented by roasted macadamia and a crack of fresh black pepper.
