The Wine

Wine & Spirits 98/100 : "Mounir Saouma calls Les Baudes his baby Bonnes Mares, as it shares with that neighboring grand cru the shifts from limestone to clay and white to red soils. He and his wife, Rotem, produce their wines with an extended élevage: They bottled this 2018 after it rested two years with the lees in barrel, a process, Mounir reports, that transformed the sweet ripeness of the vintage to freshness. The sheer exuberance of this Chambolle wasn’t enough to convince every last taster on our panel (one found the earthy barnyard character too prominent). For this critic, this was the wine of the tasting (which included nearly 450 Burgundies over the course of several weeks). Spring rose, summer raspberry, pipe tobacco and autumn earth all come together in this wine’s complexity, its sunny fruit and breathable rocky tannins imprinted in a powerful flavor memory that lives long after each sip."

About the Wine Maker

Mounir and Rotem Saouma established Lucien Le Moine nearly 20 years ago, making some of the most sought-after wines from the region. They have created a small cellar dedicated to the philosophy of making wines of purity and typicity. The approach is extreme – two people, together doing everything by hand, working with a dazzling array of Burgundy’s great terroirs. They devote themselves to select production of Crus from these select growers. They only produce Grands and Premiers Crus (with the exception of the Bourgogne range : diverse selection of Village wines), trying each year to have the most beautiful Crus in each village. They revise their selection of Crus every year, depending on the quality of a particular vineyard in a given vintage, but do not produce any more than 100 barrels (2,500 cases).
