The Wine
'Clos De L'Etoile' is 100'%' Cabernet Franc from a 1.8 ha site planted 1990 and is on sand over limestone soil. Destemmed and natural-yeast fermented with gentle maceration by infusion (no pump-overs) and aged on lees in barrel for 24 months before bottling with no fining or filtration and aged for a further year in bottle before release. A structured beauty that would suit medium term cellaring.
