The Wine

The Savagnin grape (also called Nature) is native to the iconic Jura region.

Savagnin Ouille, meaning ‘topped up'.

This Cuvee is vinified partly in oak barrels (topped up - so not oxidised) and partly in vats. Lack of oxidation allows the full, aromatic fruit-forwardness of Savagnin to push through, showing gorgeous flavors of white fruit, flowers, and earth spice .It has a powerful aromatic bouquet with notes of vanilla and spice due to the wood. This encompasses a typical vivacious minerality. A great wine to pair with white meats, cheese and creamy sauce dishes.

About the Wine Maker

Starting a winemaking venture in Jura in 1942 might seem unusual, but for Monsieur Desiré Rolet, it was the perfect moment. His journey in wine has grown into a true institution. In 1958, his four children joined the Domaine, expanding its reach by acquiring old vineyards across Arbois and Côtes du Jura. Rolet cultivates Chardonnay, Savagnin, Poulsard, Trousseau, and Pinot Noir.

The Domaine embraces an organic approach, relying heavily on ploughing. The soils are diverse and complex, with plantings matched to specific soil types. The Trousseau, for example, comes from the “en Levrin” plot north of Montigny-les-Arsures, where vines thrive in the gray marl soils of the Lias—marine limestones, shales, marls, and clays. In 2018, Cedric Ducote took over, further strengthening their commitment to organic practices.

This is a great source of wine that faithfully represents the terroir and ethos of the Jura!
