The Wine

The 2025 season was temperate, with a fairly cool and dry growing season. Warm, dry weather in late January and into early February allowed the grapes to fully ripen in excellent condition. Yields were high and the quality was exceptional.

The 2025 Domenica Estate Chardonnay was handpicked, over the course of 10 days, by block and clone in mid-February. The fruit was crushed, pressed and chilled in stainless steel overnight. Domenica

The 2025 is tauter than the past few vintages, it opens with vibrant citrus, white stone fruit, and a pronounced flinty note. The palate shows impressive concentration and a crisp, pithy grip that lingers into a long, dry finish.

About the Wine Maker

Domenica sits 460m above sea level atop the granite ridge sweeping away to the south west of Beechworth. The wines are vividly reflective of their origin, a gripping mineral texture encasing the mature vine vitality of the varietals chosen to express it.

Winemaking is traditional. Taste is more important than numbers. The yeasts comes from the site, not a packet. Pressings, solids and lees all play their part completing the picture. The wines are carefully maintained in oak bariques before being bottled unfiltered.

Winemaker Peter Graham cut his teeth at nearby Giaconda, where he worked as assistant winemaker for thirteen years.
