The Wine
This Lo-Fi Chardonnay from the Fleurieu Peninsula at Mount Compass was foot-stomped and basket-pressed, then left to rest for 12 months in old, un-topped barrels. It’s textured and layered, with stone fruit shining at the mid-palate and an impressive, lingering finish. Notes of citrus pith and sea spray add detail and structure, making it a stunning Aussie Chardonnay with a touch of European charm. No add sulphur.

About the Wine Maker 
Since 2017, Simon Amber has been quietly crafting his own wine label, Gemini, though the first bottles didn’t hit the shelves until 2021. Sourcing strictly organic fruit from Mount Compass, the Adelaide Hills, and McLaren Vale, his approach has always centered on patience. The wines spend at least 10–12 months in barrel, then additional time in bottle before release. Alongside Gemini, he continues working with Monique and Tim at Manon, where he’s been part of the family for many years. His style embraces phenolic ripeness, whole-bunch macerations, basket pressing, and zero additions.
