The Wine
Julien Guillot at Clos des Vignes du Maynes crafts this Mâcon Rouge from a mix of old Gamay varieties, including thick-skinned, dark-juiced 'teinturiers', with no added SO2. The 30- to 80-year-old vines are organically farmed in clay and limestone soils. After semi-carbonic maceration, the wine ages 18 months in large tronconic wooden vats. It pours a deep red, with aromas of blackberry, tart cherry, strawberry, black pepper, roast meat, fennel, citrus peel, and violet. The palate is ripe and elegant, offering citrusy black fruits, earthy and mineral notes, and a long, chalky finish. Julien calls it “indestructible,” built to last. Perfect with a farm chicken in sauce, best decanted or opened in advance, and ideal to cellar for five to ten years. This is a hyper sensual tonic!
