The Wine

    From an exceptional, low-yielding 19 Jura vintage, this release is truly stunning—more mineral and longer than the delightful 18 edition!

    Joly's flagship white spent nearly four years under flor, yet it remains remarkably fresh, vibrant, saline, and stony. The nose bursts with sea spray and fino, while the palate showcases flavors of walnut, grilled nuts, and a touch of dried fig. There's a hint of lemon pith and orange blossom, with saline notes and wet stone dominating. It’s perhaps better suited as a winter white but is incredibly versatile with food, as the phenolics pair well with a variety of proteins.

    ‘What can I say. This is like catnip to me. I’m probably very biased (trying with all the cells of my body not to be) in loving the wines under flor so much. But then, at the dawn of AI universalised, monotone, no emotion-evoking wine notes, why not have a favourite, one that moves you? (without inflating the score scale). Got a bit emotional here, forgive me… Open to interpretation. I think, in this case and by this stage, if you know you love sous-voile Jura, there’s no need for thinking twice here. You get all the goods from this Savagnin aged for almost four years in old oak barrels. It has THE perfume. Pungent—yes, delicious—abso-f-lutely. The wonderful marriage of peanut brittle, bitterness, salt, spiced rum, truffles, pink grapefruit, yellow apples and quince is matched with bone dry, aniseed-induced palate that smoothly drives the minerally flavour for a very long time and to ones delight.’

    About the Wine Maker

    The Joly family have a proud sixty-year Jura history of wine production – the family having originated from Champagne. Winemaker Cedric Joly is the grandson of Michel who founded the domaine after moving from Champagne following WWII in search of a fresh start.

    Cedric brings his experience from working in Burgundy, a region with a similar terroir, to the traditional winemaking of Jura. He makes sustainable, small production wines from the historic grapes of the region. One of the most intriguing is Trousseau, a grape that makes light and transparent reds that are wild and aromatic. 

    The domaine is based in the Southern Jurain the commune of Rotalier. Here the magic is made in the cold blue marl soils (decomposed limestone/clay). These notoriously hard & unforgiving soils to work allow the Savagnin & Chardonnay to reach mythical & enviable maturity, minerality and acidity - quite unique to the area.

    Farming is organic and yields are impossibly low to always ensure quality is maintained. Like many Jura producers, the whites are released with significant bottle age & the reds quite young. None of Cedric’s whites are topped up yet they are very pure & show piercing minerality & very high salinity.
