Originating from the windswept vineyards of Val do Salnés, situated near the wild Atlantic, this wine exhibits the Albariño salinity and vibrant acidity. The granite contribute to its depth, and there is a clear emphasis on minimal, preserving the the fruit. Anticipate bright citrus notes - with a hint - balanced with a delightful minerality and nuances of nectarine. A touch of nutmeg is also, adding a notable of texture and depth.
The winemaking process emphasizes intervention and the movement of the must entirely by gravity. Grapes arrive at ground level, where they are sorted and pressed. The must is cooled and left to macerate on the skins for a few hours. Stainless steel tanks located below ground level then receive the must; temperature-controlled fermentation using indigenous yeasts lasts 4 weeks The wine is then kept on lees for 2 weeks, with regular stirring to enhance the texture and aromatics. The wine is stabilized, with some vintages undergoing partial malolactic fermentation. It remains unfined, with a light filtration before bottling.
