The Wine
A Vino de Pasto from the laminated Albarizas Barajuelas of Pago Macharnudo. It's aged in 80 year-old bota with 12 months under velo de flor. It's 13.5% natural ABV (no soleo used).
'La Escribana' is a single parcela wine, facing south-east and at 100metres altitude (one of the highest in Marco de Jerez). There's a green harvest, for all the normal reasons, but which also gives a reserve 'green wine' which Willy uses to correct acidity naturally, and add finesse. 'La Escribana' is 'the writer', perhaps a chalk board medium for the illiterate, a translator, documentor, faithful witness.
The wine is a new stop along the Palominos-Finos continuum. As we often find with Spanish, there's a Japanese connection. It's a wine of green bamboo washed by billy tea, of pistachio skin sake. It's Japanese like barely beer with a rice lining.
Gold and green to look and smell. It has a semi-fermentated barley-sake-ricey-acetic tang and gourd skin, paddy-melon-in-the-cool-of-night-edginess. There's a titch of steel and the smell of reeds and rush matting, stripped bamboo, lemongrass outers and typical pistachio skin. It's a wine of lovely depth with some richness but edged sweet-sour.

About the Wine Maker
After a long career in the oenological world, particularly in the field of research, Luis Pérez embarked on this project in 2002 with the aim of reviving the tradition of red wine in the lands of Jerez. Thus, Luis Pérez El Muelle de Olaso would return to the so-called single-vineyard wines. Specifically, this term refers to the natural wines of the Jerez region, which are not fortified and acquire their alcohol naturally (without the addition of wine alcohol). These wines were quite common in the past, but changes in consumer tastes and the drafting of the first regulations of the D.O. Jerez – where fortification was mandatory – led to these wines losing prominence at the beginning of the twentieth century.
Since 2017, efforts have been made to revive these wines. Luis Pérez is leading this effort from the 25-hectare Hacienda Vistahermosa farm, where he has planted red varieties on 14 hectares.
This unique estate is located in the heart of the Jerez vineyard on the high hill of Pago del Corchuelo, with characteristics that make it unique:
- Its high altitude, influenced by maritime winds and a specific microclimate.
- The nature of the soil, with calcareous clays with gypsum loams unique to the area (La Albariza).
- The planting and cultivation aimed at producing high-quality wines.
