The Wine

Argyros Assyrtiko from Santorini perfectly captures the magic of this grape and island. The vines are shaped in the traditional kouloura style—a basket-like coil that shields the grapes from harsh winds and preserves precious moisture in the island’s hot, arid climate. Everything is done by hand, with minimal yields and maximum character. Fermentation happens in stainless steel with native yeasts to let the vineyard’s voice shine through. No oak, no frills—just the pure, stony essence of the place.

About the Wine Maker

Founded in 1903 and now led by fourth-generation winemaker Matthew Argyros, Domaine Argyros tends some of the oldest ungrafted vines in the Mediterranean. These twisted, low-yielding plants thrive in Santorini’s unique volcanic soils of ash, lava, and pumice. It’s one of the most extreme winegrowing settings in the world, and the wines are remarkable.
