The Wine
Crafted in a topped-up, non-oxidative style, with barrels kept full during ageing to avoid the yeast veil typical of traditional Jura whites. The result is a fresher, more streamlined take on Savagnin, showcasing the grape’s natural minerality and structure over the savoury, sherry-like notes of its sous voile sibling.
It greets you with aromas of citrus zest, white peach, quince, crushed herbs, and wet stone, accented by green almond and a touch of exotic fruit. On the palate, it’s taut and saline, with lively acidity, a subtle waxy feel, and a long, mineral-driven finish of flint and fennel seed. A great match for seafood, soft cheeses, and lightly spiced dishes.

About the Wine Maker 
Founded in 2012 by Guillaume d’Angerville and François Duvivier, Domaine du Pélican is based in Montigny-lès-Arsures, a hillside village just north of Arbois, often called the world capital of Trousseau. The estate started with historic parcels once cared for by the Chavanes family, including the famed Grand Curoulet, and has since grown to 15 hectares in the Arbois appellation. Today, the vineyards feature all five of the Jura’s classic grape varieties: Trousseau, Poulsard, Pinot Noir, Savagnin, and Chardonnay.
The story began with one unforgettable bottle—Stéphane Tissot’s 2005 Chardonnay Arbois Les Bruyères—which inspired Guillaume to seek out vineyards in the Jura. His search led to biodynamically farmed plots at Château Chavanes, untouched land once worked by Jean-Marc Brignot, and eventually to vines acquired from the iconic Jacques Puffeney after his retirement.
