The Wine

- Parcels located in the little town of Vrihou on the slopes of Voiteur.
- South facing
- Grey marl terroir with some limestone
- Indigenous yeast
- Fermented and aged in older barrel for 5 years under the veil.

The Côtes du Jura Savagnin undergoes a five-year aging under flor, resulting in a notable oxidative profile, akin to a young Vin Jaune. Despite this, it retains remarkable acidity and freshness. In your face and electrifying!

About the Wine Maker

Starting a winemaking venture in Jura in 1942 might seem unusual, but for Monsieur Desiré Rolet, it was the perfect moment. His journey in wine has grown into a true institution. In 1958, his four children joined the Domaine, expanding its reach by acquiring old vineyards across Arbois and Côtes du Jura. Rolet cultivates Chardonnay, Savagnin, Poulsard, Trousseau, and Pinot Noir.

The Domaine embraces an organic approach, relying heavily on ploughing. The soils are diverse and complex, with plantings matched to specific soil types. The Trousseau, for example, comes from the “en Levrin” plot north of Montigny-les-Arsures, where vines thrive in the gray marl soils of the Lias—marine limestones, shales, marls, and clays. In 2018, Cedric Ducote took over, further strengthening their commitment to organic practices.

This is a great source of wine that faithfully represents the terroir and ethos of the Jura!
