The Wine
Jura is known for these rare wines called "Vin Jaune" made of 100% Savagnin grape variety. The wine is left in barrels for 60 months minimum, the wine is aged under flor which we call in french 'sous-voile'. These wines are hard to make therefor, in a smaller bottle (620ml) and are usually enjoyed with winter dishes ; veal in a rich creamy morel sauce, or the local Jura cheese 'Comté'.

About the Wine Maker 
Starting a winemaking venture in Jura in 1942 might seem unusual, but for Monsieur Desiré Rolet, it was the perfect moment. His journey in wine has grown into a true institution. In 1958, his four children joined the Domaine, expanding its reach by acquiring old vineyards across Arbois and Côtes du Jura. Rolet cultivates Chardonnay, Savagnin, Poulsard, Trousseau, and Pinot Noir.
The Domaine embraces an organic approach, relying heavily on ploughing. The soils are diverse and complex, with plantings matched to specific soil types. The Trousseau, for example, comes from the “en Levrin” plot north of Montigny-les-Arsures, where vines thrive in the gray marl soils of the Lias—marine limestones, shales, marls, and clays. In 2018, Cedric Ducote took over, further strengthening their commitment to organic practices.
This is a great source of wine that faithfully represents the terroir and ethos of the Jura!
