Thymiopoulos Earth & Sky Xinomavro 2023
The Wine
This wine brings together the finest parcels of the estate, made from 45-year-old vines—70% from the warmer Trilofos area (150–250 meters altitude) and 30% from the cooler Fytia village (450–650 meters). It’s Apostolos’ most elegant and refined red, with impressive focus and charm. Reminiscent of fine Burgundy, it delivers aromas of black slate and red fruit, balanced by silky tannins and lively acidity. The vines thrive in limestone soils with schist and clay topsoil, in a warm climate tempered by Mediterranean breezes and cool air from Mount Vermio, which keeps ripening temperatures low. The high elevation and dramatic day-night temperature changes in Fytia add extra complexity and finesse. Grapes are 60% de-stemmed, macerated for 40 days, and fermented with native yeasts before aging for 18 months in third-use, 500-liter French oak barrels.

About the Wine Maker 
Apostolos Thymiopoulos is without a doubt the rising star of Naoussa.
In the past decades he has worked with local growers and at the same time has forged out an expression of Xinomavro that shows this variety in a modern light. His understanding of natural winemaking is evident, yet the wines maintain a clean, fresh elegance and purity of fruit, that’s delicious!
His vines, cultivated according to biodynamic methods at an altitude of 180m in the southern sector of the appellation, are blessed with a good amount of sunshine. The terrain is comprised of Naoussa’s most geologically complex soils, containing limerich marlstone, schist and granite. These are seamlessly crafted wines with light-handed tannins and almost no oak. Thymiopoulos shuns filtering and extraction and his wines are aged in vats and barrels the old-fashioned way which allows for their soft rounded feel in the mouth. Earth and Sky is the benchmark here and was the first wine the Estate produced after being established in 2003 and consistently shows the greatness that is the variety Xinomavro.
