The Wine
Buondonno’s Chianti Classico is crafted entirely from Sangiovese grapes, with an annual production of 25,000 bottles, making it the winery’s flagship wine. It undergoes 20 days of maceration in steel and cement tanks with daily pump-overs, followed by 12 months of aging in partially used wooden barrels of various sizes. The result is a juicy, intense Sangiovese that delivers an irresistibly mouthwatering character with a hint of rustic charm.
"It's getting better and better at Buondonno. Pure Sangiovese from organically certified vineyards, vinified in steel and concrete and then aged in a mix of barrel sizes. Archetypal Chianti Classico. However, it is astonishingly dark, but this is one of the consequences of both climate change and investment in the so-called CCL clones. Dried orange, campari, cranberry juice mixed into the god drink of cherries and rust. It is so much a food wine and you should eat arosto of pork, porchetta, the shank chop with lemon zest or rabbit with olives and rosemary. Azienda Agricola Buondonno is an organic wine estate in Castellina in Chianti, guided by a philosophy of minimal intervention and deep respect for nature. The vineyards sit high on clay and limestone soils, naturally fostering freshness, moderate alcohol, and precise aromas, especially in Sangiovese. Farming is fully organic, with vineyard work aimed at keeping the vines balanced and the soil healthy rather than chasing high yields. In the cellar, fermentations use native yeasts, and aging happens in neutral vessels like concrete, steel, and large oak to preserve varietal character. The wines are bright, tense, and distinctly Tuscan, with red cherry flavors, lively acidity, and fine, food-friendly tannins, showing Buondonno’s quiet yet thoughtful commitment to authenticity and to expressing the Chianti Classico landscape.
